Tomato-Onion Sauce ('Marinara')

This sauce is versatile. I use it as a base for many recipes - 

- Add it to spaghetti to make a simple pasta. 

- Blend it to make a simple tomato basil soup. 

- Use it as a base for pizza along with other toppings. 

- Cook it a little more with Indian spices to make many Indian curries.

Ingredients:

1/2                Onion julienned (cut lengthwise) 3                   Tomatoes 1 tbsp           Oil 3-4 cloves    Garlic diced or crushed Salt to taste Black pepper to taste Optional: Basil or Cilantro


Method:

  1. Warm up the pan on medium heat

  2. Add oil and heat for a minute or so until warm

  3. Add garlic and cook until fragrant (but before it becomes brown). About 30 secs or so.

  4. Add onions and sauce until translucent. About 2 - 3 mins

  5. Add basil.

  6. Crush tomatoes with hand into the pan (be careful not to splash across the counter; piercing with a knife minimizes the chances of this happening)

  7. Add salt to taste. I would start with a 1/4 tsp and go from there

  8. Cook for another 5 - 7 mins until tomatoes are soft

Sauce is ready!
