Reminder: wash your hands before you start cooking

Ingredients:
Potato patties:
2 Potatoes (large)
2-3 pods Garlic smashed or minced
1-2 tsp Ginger chili paste
2 tbsp Cilantro chopped
1-2 tsp Lime / Lemon juice
Salt to taste
Rock salt to taste
Oil as needed, for cooking patties
Optional
1 tsp Garam masala
Green Chutney:
This will last more than one serving
1 bunch Cilantro
2 tsp Cumin seeds
1 tbsp Raw peanuts
1 inch Ginger
5 - 8 Green chilies
2 tsp Lemon / lime
Salt to taste
Water as needed
Optional:
4-5 Curry leaves
2-3 pods Garlic
These potato patties make for a great snack; the same mixture could also be used to make toast sandwich. Top it with onions, tomatoes and chutney and we have a lip smacking meal.

Method:
Potato patties:
Boil potatoes until soft. Typically, 15 mins in Instant Pot or 4-5 whistles in a pressure cooker.
Mash potatoes, add remaining ingredients and mix thorougly; potatoes don't have to be finely mashed
Heat a griddle or non-stick pan. On the side, divide it into 6 - 8 equal portions, make a ball and flatten each portion.
Set 4 patties on the warm pan and circle each of them with a little oil (1 tsp per patty).
Let patties cook on medium heat until golden brown (3 mins),
Flip the patties and cook the other side until golden brown (3 mins).
Cook the remaining patties in the same way.
Green chutney:
While cooking patties you can make chutney on the side in a blender.
Blend peanuts, cumin seeds, green chilies, ginger, curry leaves, garlic.
Add cilantro, lemon juice, salt, 1/4 cup water and blender into a paste.
Add water to the paste to adjust consistency to that of a dip.
Adjust the amount of green chilies depending on your palate. I typically make a spicy paste and dilute only the amount that I plan on consuming. I freeze the rest.
